Casa Defra Valpolicella Ripasso

Known as the baby Amarone, Valpolicella Ripasso gets its enhanced flavours by the ripasso technique. Starting off life as a basic Valpolicella, it enters a second fermentation which is triggered by adding the skins left over from the Amarone production to the base of the wine. It remains there for 15-20 days to allow the flavours to develop. This wine from Casa Defra shows all the true characters of a classic Valpolicella Ripasso.

A wine with a vivid ruby hue, that envelops you with vibrant aromas of cherries, vanilla, pepper and chocolate. This is refreshed by hints of small berries, roses and rosemary. These aromas follow onto the palate with a finish reminiscent of roasted coffee beans. Try with stewed lentils, cheese fondue, tofu dishes, beef, stews, pasta or deli sandwiches.
